Ingredients
  • 300 g. peaches, peeled and sliced
  • 200 g. apricots, peeled and halved
  • 150 g pineapple, peeled, and cut into chunks
  • 200 g. cantaloupe, cut into chunks
  • 1 lime sliced
  • 1 cup water
  • 3/4 cup sugar
  • 3 tbsp. lemon juice
  • 2 teaspoon curry powder

Directions
  1. Place peaches and apricots in soaking solution while preparing other ingredients
  2. Combine water, sugar, lemon juice, and curry powder. Bring to boil.
  3. Reduce heat and add peaches, apricots, pineapple, and cantaloupe. Simmer just until fruit is hot through.
  4. Pack fruit into jars, adding 1 lime slice to each jar when filling.
  5. Leave 1/2 inch (13 mm) head space.
  6. Pour hot syrup over fruit, leaving 1/2 inch ( 13 mm) head space.
  7. Adjust caps, process 30 minutes in boiling water bath.
