Curried Fruit Conserve

- 300 g. peaches, peeled and sliced shopping list
- 200 g. apricots, peeled and halved shopping list
- 150 g pineapple, peeled, and cut into chunks shopping list
- 200 g. cantaloupe, cut into chunks shopping list
- 1 lime sliced shopping list
- 1 cup water shopping list
- 3/4 cup sugar shopping list
- 3 tbsp. lemon juice shopping list
- 2 teaspoon curry powder shopping list
How to make it
- Place peaches and apricots in soaking solution while preparing other ingredients
- Combine water, sugar, lemon juice, and curry powder. Bring to boil.
- Reduce heat and add peaches, apricots, pineapple, and cantaloupe. Simmer just until fruit is hot through.
- Pack fruit into jars, adding 1 lime slice to each jar when filling.
- Leave 1/2 inch (13 mm) head space.
- Pour hot syrup over fruit, leaving 1/2 inch ( 13 mm) head space.
- Adjust caps, process 30 minutes in boiling water bath.
