Spiffy Stuffed Ham Casserole Recipe

Ingredients

1/2 C. green pepper, chopped

1/4 C. onion, chopped

1/4 C. butter

1/2 C. bread crumbs

8 hard-boiled eggs, chopped

1 C. Mayonnaise

2 t. dry mustard

salt and pepper to taste

24 slices of cooked ham

1 C. cheddar cheese, shredded

1 C. swiss cheese, shredded

A can of pineapple rings

Directions

Cook green pepper and onion in butter until tender, mix in bread crumbs, eggs, mayo, mustard, salt and pepper. Spread mixture on ham slices and roll up. Place in a single layer in a buttered 13X9" pan-sprinkle w/cheeses. Bake at ~400 for 15 minutes, top w/pineapple rings and bake 5 minutes longer or until done.
