Yuppie Potatoe Skins

- 1 Large Sweet potato- skin on thinly (1cm) sliced shopping list
- olive oil shopping list
- MIld blue cheese shopping list
- Sweet pancetta shopping list
- fresh basil shopping list
- salt and pepper shopping list
How to make it
- Lightly brush the potato slices with olive oil and place on a non stick pan.
- Salt and pepper the taters
- Place under broiler (on high) for 10 mins until taters are "poke-able"
- Pull out of the oven, top each tate with little pancetta and a sprinkle of blue cheese.
- Top with fresh basil and place back in the broiler until the cheese melts and the panchetta becomes nice and crispy
- Enjoy with sour cream!
