Yuppie Potatoe Skins Recipe
Potato skins get an upgrade from regular pub fare! This is one of the best appetizers I have had, it is simple to make and can be done right before serving

Ingredients
  • 1 Large Sweet potato- skin on thinly (1cm) sliced
  • Olive Oil
  • MIld Blue cheese
  • Sweet Pancetta
  • Fresh Basil
  • Salt and Pepper

Directions
  1. Lightly brush the potato slices with olive oil and place on a non stick pan.
  2. Salt and pepper the taters
  3. Place under broiler (on high) for 10 mins until taters are "poke-able"
  4. Pull out of the oven, top each tate with little pancetta and a sprinkle of blue cheese.
  5. Top with fresh basil and place back in the broiler until the cheese melts and the panchetta becomes nice and crispy
  6. Enjoy with sour cream!

Yummy! sounds so good, makes me hungry - but i ought not to, maybe i'll have it after the holidays with a nice, large, cold beer :-)
