How to make it

  • Lightly brush the potato slices with olive oil and place on a non stick pan.
  • Salt and pepper the taters
  • Place under broiler (on high) for 10 mins until taters are "poke-able"
  • Pull out of the oven, top each tate with little pancetta and a sprinkle of blue cheese.
  • Top with fresh basil and place back in the broiler until the cheese melts and the panchetta becomes nice and crispy
  • Enjoy with sour cream!

    yummy! sounds so good, makes me hungry - but i ought not to, maybe i'll have it after the holidays with a nice, large, cold beer :-)
