Pumpkin Custard Recipe
This is a Weight Watcher recipe I modified to be even less fattening. Like pumpkin pie without the crust and no guilt!

Ingredients
  • 1/4 tsp. ground cloves
  • 1 tsp. ground cinnamon
  • 1 tsp. ground ginger
  • 1 tsp. cornstarch
  • 1/8 tsp. table salt
  • 1 1/2 cup canned pumpkin puree
  • 1 1/2 cup fat free evaporated milk
  • 1/2 cup regular egg substitute
  • 1 tsp. vanilla extract

Directions
  1. Blend well with electric mixer and pour into 9 x 13 pan sprayed with non-stick cooking spray.
  2. Bake at 350 degrees for about 40 minutes until toothpick inserted in middle comes out clean.
