Artichokes And Mashed Potatoes

- 4 large idaho potatoes, peeled and quartered shopping list
- 1 can artichoke hearts (non-marinated) I get the frozen ones and find they have an unadulterated flavor. shopping list
- 3 T butter shopping list
- 1/4 cup milk shopping list
- garlic if you wish (I always wish lol) shopping list
- salt & pepper to taste shopping list
How to make it
- Boil potatoes for 15-20 minutes or until potatoes are tender when pierced with a fork.
- Drain.
- In a large mixing bowl, pureƩ artichoke hearts with half the butter and milk, using a hand blender or mixer.
- Add potatoes and remaining butter and milk (slowly) and mix until smooth.
- Add salt and pepper to taste.

This sounds great. It combines my favorite vegetable with my second favorite starch (my favorite starch is Thai perfumed rice). I will definitely try this out.
