Mels Spiced Apple Rum Cider

- 3 quarts apple cider (I filled a 3 1/2 qt crock pot up. shopping list
- 1 apple, studded with cloves shopping list
- brown sugar to taste (I just scoop it in until I like the taste) shopping list
- 6 cinnamon sticks (or to taste) shopping list
- approximately quarter cup of whole cloves (or less, to taste) shopping list
- 1 tsp allspice shopping list
- dark rum shopping list
How to make it
- Pour cider into the crockpot, add the clove studded apple and other spices and sugar. Cover the crock pot and let it cook over night, or about 10 hours on low.
- About three hours from serving, take the lid off the pot and let the cider cook down. This will concentrate the spices and the cider will be a little thicker. Just before serving, add a cup of dark rum (or however much you want!). You don't want the rum to cook off.
- Add more cider as it cooks down and as friends drink it up.
- Variation: Add a cup of orange juice and float fresh orange slices when serving.
- Note: If you don't like a heavy clove taste, use less than a quarter cup of cloves as it REALLY cooks into the cider. I'm just 'guesstimating' as I don't measure.

- 2005: I used a little less cloves this year.
- 2006: I really need to measure my cloves. Used more cinnamon sticks. But it was really good this year. I forgot to float the apple in it, too.
