How to make it

  • In a large saucepan, stir together the sugar, orange juice, vinegar, orange rind, cinnamon, and mace.
  • Stir in the cherries.
  • Bring to a boil over high heat. Lower heat to medium-high and boil, uncovered, for about 5 minutes.
  • Remove from the heat and stir in the brandy.
  • Transfer to a covered container and refrigerate for at least 8 hours before serving.
  • This keeps well in the fridge for a week)
