How to make it

  • Peel potatoes and place in a medium pan with enough cold water to cover them.
  • Bring to a boil over medium heat then drain potatoes and refrigerate.
  • While chilled cut into thin slices.
  • In medium cast iron skillet sauté onions in bacon drippings then add potatoes.
  • Add seasonings and periodically shake pan over medium heat until potatoes are golden all over.
  • Serve hot.
