Maple Cottage Pudding Recipe
This wonderfully simple but delicious cake makes it's own sticky maple sauce. My family loves this stuff!

Ingredients
  • 3/4 c maple syrup
  • 3/4 c water
  • 1 1/2 c flour
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1/3 c shortening
  • 1 c sugar
  • 2 eggs
  • 1 tsp vanilla
  • 3/4 c whole milk

Directions
  1. Grease a 9 inch baking pan.
  2. In a medium saucepan combine the water and maple syrup and bring to a boil. Boil one minute then pour into pan.
  3. In a mixing bowl combine the flour, baking powder and salt.
  4. In another bowl cream the shortening then blend in the sugar, eggs, and vanilla.
  5. Add the flour mix to the creamed mix alternately with the milk to make a thick batter.
  6. Carefully spoon batter over boiled maple syrup in pan then bake in a 350 degree oven for about 55-60 minutes or until cake springs back when touched.
  7. Spoon hot syrup sauce over top of cake when serving. Great with ice cream!
