Easter Rice Pie Recipe
This dessert is delicious hot or cold.Can be used as a snack as well as dessert.

Ingredients
  • 1 cup ricotta cheese
  • 1/2 cup cooked cooled rice
  • 4 whole eggs
  • 1 cup granulated sugar
  • 1 tablespoonful cinnamon
  • 2 teaspoonsful vanilla
  • 2 teaspoonsful lemon extract
  • 2 unbaked 9 inch pie crusts
  • Mix ricotta and rice. Add 3 beaten eggs one at a time until smooth. Add sugar and all the flavorings and cinnamon. Pour into unbaked pie shell top with second crust . Beat remaining egg with 1 tablespoon water until frothy. Brush top crust all over. Prick top for air vents.
  • Bake in 350 oven for 40 t0 45 minutes or until lightly brown.
