Beef Stroganoff Recipe
Reasonably quick to prepare, and great to serve with a mixture of ordinary and wild rice.

Ingredients
  • 10oz (275g) good quality beef steak, sliced into strips
  • 10 button mushrooms, halved
  • 1 small onion, finely chopped
  • 1 garlic clove, crushed
  • 2 tsp (10g) paprika
  • 1 cup (0.5 pint) beef stock
  • a generous pinch of dried parsley
  • a squeeze of fresh lemon juice
  • 0.5 cup (120ml) double cream

Directions
  1. In a frying pan, heat a drizzle of olive oil to a medium heat and fry the onion for 3 minutes.
  2. Add the baby button mushrooms and garlic and fry for another 3 minutes.
  3. Add the beef strips and fry for 3 minutes.
  4. Now add the paprika and stir to coat.
  5. Add the beef stock and bring to the boil. Reduce by half.
  6. Add the parsley and lemon juice.
  7. Add the cream, and gently simmer for 4 minutes.
  8. Check the seasoning, and serve.
