Very moist loaf, nice buttered and a favourite in the grandchildrens lunch box.

Ingredients
  • 142 mls milk
  • 1 egg
  • 75 gms dried apricots
  • 2 tbs apricot jam
  • 3 tbs golden syrup
  • 175 gm flour
  • 1 tsp baking soda
  • 1/4 tsp mixed spice

Directions
  1. Put milk and sugar into a pan, heat gently until sugar is disolved, do not over heat.
  2. Add golden syrup, mix
  3. Add egg and beat well.
  4. Add sifted flour, baking soda and mixed spice. Stir until well mixed and add apricots.
  5. Pour into a greased loaf tin.
  6. Bake for 45 - 55 mins @ 180C
  7. When cooked slice. Eat as is or serve buttered

I want to make this recipe, very badly I might add, as it looks so wonderful and colorful! I just have to figure out the measures! *smile* Tops all the way around!


Looks very yummy, but I am confused... it mentions sugar in the directions, but there is no sugar in the ingredients - do you mean the jam??
