Winter Vegetable Soup

- 6 sweet potatoes, peeled and chopped shopping list
- 6 white potatoes, peeled and chopped shopping list
- 3 parsnips, peeled and chopped shopping list
- 3 rutabagas, peeled and chopped shopping list
- 3 onions, peeled and chopped shopping list
- 9 carrots, peeled and chopped shopping list
- 4-1/2 cups butternut squash, peeled and chopped shopping list
- 3-1/4 cups chicken, vegetable or beef stock, your preference shopping list
- 1/2 tsp. ground cinnamon shopping list
- 1/2 tsp. ground nutmeg shopping list
- 1/2 tsp. ground ginger shopping list
How to make it
- Add first 8 ingredients to soup pot. Bring to a boil, reduce heat, and simmer for 50-60 minutes, or until vegetables are soft. Purée with hand blender or in blender in batches. Stir in spices before serving
