Winter Vegetable Soup Recipe
A wonderful blend of winter vegetables with spices.

Ingredients
  • 6 sweet potatoes, peeled and chopped
  • 6 white potatoes, peeled and chopped
  • 3 parsnips, peeled and chopped
  • 3 rutabagas, peeled and chopped
  • 3 onions, peeled and chopped
  • 9 carrots, peeled and chopped
  • 4-1/2 cups butternut squash, peeled and chopped
  • 3-1/4 cups chicken, vegetable or beef stock, your preference
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. ground nutmeg
  • 1/2 tsp. ground ginger

Directions
  1. Add first 8 ingredients to soup pot. Bring to a boil, reduce heat, and simmer for 50-60 minutes, or until vegetables are soft. Purée with hand blender or in blender in batches. Stir in spices before serving
