The Basic Crepe

- 3/4 c. flour, sifted shopping list
- 1 tsp. baking powder shopping list
- 1/2 tsp. salt shopping list
- 2 eggs shopping list
- 2/3 c. milk shopping list
- 1/3 c. water shopping list
How to make it
- In a large bowl, combine the flour, baking powder and salt. Mix well.
- Beat the eggs, milk and water in a small bowl until blended.
- Make a well in the center of the dry ingredients and add egg mixture.
- Whisk just until combined, ignoring any lumps.
- Heat a small skillet over medium heat.
- Spread a few drops of oil over the surface.
- Pour in 1/4 cup of the batter and quickly tilt skillet to spread the batter over the entire surface.
- Cook until brown on the bottom, turn and cook until brown on the other side.
- Stack crepes on a plate.
- If you wish to freeze the crepes for later use, layer a piece of waxed paper between each one, then slip the stack into a sealable plastic bag to freeze.
- * serving amount really varies. but if more is needed , just make another batch. : )
