Ingredients
  • 4 cups water
  • 1 lb medium shrimp; unpeeled
  • 3 tablespoons butter
  • 1/3 cup flour
  • 1/2 cup milk
  • 2 scallions; minced
  • 1 teaspoon lemon juice
  • 1/4 teaspoon Tabasco Hot Sauce
  • 1/2 teaspoon Beau Monde Seasoning
  • 1/4 teaspoon fine ground paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon fine ground black pepper
  • 1 egg; beaten
  • 1/2 cup dry breadcrumbs
  • 1-1/2 cups peanut oil
  • 1/2 cup dry breadcrumbs

Directions
  1. Bring water to a boil; add shrimp, and cook 3 to 5 minutes or until shrimp turn pink. Drain well; rinse with cold water. Chill. Peel, devein, and chop shrimp.
  2. Melt butter in a heavy saucepan over a low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat, stirring constantly, until mixture is thickened and bubbly.
  3. Stir in green onions, lemon juice, Tabasco Hot Sauce, Beau Monde Seasonings, paprika, salt and pepper.
  4. Combine shrimp, egg, 1/2-cup breadcrumbs, and sauce mixture.
  5. Shape into 4 patties; dredge in remaining crumbs.
  6. Pour oil to depth of 1/2 inch into a skillet. Fry in hot oil until golden, turning once.
  7. Drain on paper toweling and serve warm.

  9. Note: Louisiana likes to think of itself as a sovereign state and it is steeped in tradition from the melding of French, Spanish and American history. It was a part of the Louisiana Purchase and became a slave state until the emancipation proclamation and the collapse of the Confederacy. Because of it's tidal flooded bayou and Mississippi River bottom lands it was one of the early producers of rice. The Negros, brought to Louisiana as slaves, brought with them a host of influence to what is known as "Good Ole Louisiana Soul Food" that has help blossom into two of the United States greatest cuisines; the Cajun and the Creole. They brought the seeds from Africa, to plant the okra, that became a necessary ingredient in the Cajun dish that bears its name...Gumbo.

It is a world class hot sauce and has become a part of Cajun and Creole Cuisines. I have collected two recipes from this place that I call Tabasco Classic recipes. The are: Tabasco Classic - Eula Mae's Cajun Seafood Gumbo and Tabasco Classic - Mama Blue's Shrimp Patties. I offer them for your enjoyment.
