Indian Bean Salad

- 2 cups dried chick peas shopping list
- 1 tablespoon rice wine vinegar shopping list
- 4 tablespoons fresh grated ginger shopping list
- 1 tablespoon minced garlic shopping list
- 2 tablespoons peanut oil shopping list
- 2 tablespoons coconut milk shopping list
- 1 teaspoon cilantro shopping list
How to make it
- Rinse chickpeas then place in pot with water to cover by 2 inches.
- Bring to boil then partly cover and simmer for 2 hours.
- Let cool then stir in vinegar, ginger, garlic, oil, coconut milk and cilantro.
- Serve at room temperature or chill for one hour.
