Ingredients
  • 1 cup canned peaches
  • 2 eggs slightly beaten
  • 1 cup all-purpose flour
  • 1 ½ cup whole-wheat flour
  • 1/4 tsp salt
  • ½ cup wheat bran
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • ½ cup honey
  • 2 8-oz cartons low-fat peach yogurt
  • ½ cup oil

Directions
  1. Drain the canned peaches and chop them.
  2. Beat the eggs slightly.
  3. In a bowl, combine the flours, salt, bran, baking powder, baking soda and cinnamon.
  4. In a separate bowl, combine honey, egg, yogurt and oil. Mix well and add to the dry ingredients.
  5. Mix well until a smooth batter.
  6. Add the chopped peaches.
  7. Spray muffin cups with some cooking spray.
  8. Pour the batter into the muffin cups filling little less than the full..
  9. Bake the muffins at 350 degrees for 18 to 20 minutes or until lightly browned.

Those sound sooooo good - and I love the wheat bran and ww flour for some added nutrition. Thanks for sharing this one...I will try to make these when I go visit my granddaughter next!
