Lemon Ginger Squares Recipe

Ingredients
  • Crust:
  • 2 cups flour
  • 1/2 cup confectioners' sugar
  • 1 cup chilled unsalted butter, cut into small cubes
  • 1/4 cup coarsely* (see note in directions) chopped hazelnuts that have been toasted lightly in the oven
  • Filling:
  • 4 eggs
  • 2 cups sugar
  • 1/3 cup fresh lemon juice
  • 1/4 cup flour
  • 1/2 tsp baking powder
  • 1/4 tsp ground ginger
  • Optional: Confectioners' sugar for dusting top

Directions
  1. Preheat oven to 350F.
  2. Make the crust: In a food processor (or using pastry cutter or forks), blend crust ingredients until they resemble coarse meal. (NOTE: If not using a food processor, chop nuts quite fine instead of coarsely.)
  3. Press mixture evenly into the bottom of a lightly greased 13x9" baking pan.
  4. Bake 20 minutes or until golden.
  5. Let the crust cool completely in the pan on a rack.
  6. Make the filling: In a large bowl, beat eggs, sugar and lemon juice together thoroughly. Add flour and baking powder and stir to blend.
  7. Pour filling over baked crust and bake for 25 minutes or until the filling is set and pale golden.
  8. Remove from pan and set on rack to cool; cut into 16 squares.
  9. Optional: Dust with confectioners' sugar before serving.
