Upside-Down Huckleberry Cake Recipe
Old recipe handed-down. Picked huckleberries in the morning, baked pie & cakes in the afternoon

Ingredients
  • 2 heaping Tbsp. Crisco
  • 1 cup sugar
  • 1 egg 2 tsp. baking powder
  • 2 cups flour
  • 1 cup milk
  • 1 qt. huckleberries or blueberries
  • 1 cup hot water
  • 1 cup sugar

Directions
  1. Mix well the Crisco, sugar and egg
  2. Add baking powder, flour and milk and beat well.
  3. Put batter in 9 x 13 in. dish and put berries over batter.
  4. Mix hot water and sugar and dissolve; pour over berries.
  5. Bake in oven at 375 degrees for 1/2 hr. to 45 min., just so the cake comes to top and berries go to bottom.

Hi Thanks for your comments on huckleberry cake. some people don't invert the cake but I like the berries on top like pineapple upside down cake. It is done when golden brown & cake tester comes out clean like a regular cake ty


I was in Idaho for a family reunion and my cousin went out with her kids and picked huckleberries for hours to make a topping for ice cream. Words cannot describe how good that topping was. Eat these up people, they are soooooo good for you but hard to find.
