Upside-Down Huckleberry Cake

Old recipe handed-down. Picked huckleberries in the morning, baked pie & cakes in the afternoon

Mix well the Crisco, sugar and egg
Add baking powder, flour and milk and beat well.
Put batter in 9 x 13 in. dish and put berries over batter.
Mix hot water and sugar and dissolve; pour over berries.
Bake in oven at 375 degrees for 1/2 hr. to 45 min., just so the cake comes to top and berries go to bottom.

This sounds magical--the batter into the pan first, the huckleberries sprinkled on top. When it is thru baking, the berries are on the bottom, and the cake has risen above the berries.

I was in Idaho for a family reunion and my cousin went out with her kids and picked huckleberries for hours to make a topping for ice cream. Words cannot describe how good that topping was. Eat these up people, they are soooooo good for you but hard to find.

Hi Thanks for your comments on huckleberry cake. some people don't invert the cake but I like the berries on top like pineapple upside down cake. It is done when golden brown & cake tester comes out clean like a regular cake ty
