Roast Pork Indonesian Style - Babi Pangang Recipe

Ingredients
  • 1 lb. pork tenderlion
  • Half a head of cabbage
  • Marinade Ingredients:
  • 2 t. ginger powder
  • 1 t. garlic powder
  • 1 t. Laos powder (Lengkuas or Galangal)
  • 1 t. onion powder
  • 2 T. sweet soy sauce (ketjap manis)
  • salt and pepper, to taste
  • Sauce Ingredients:
  • ½ c. dark brown sugar
  • 2 t. sweet soy sauce (ketjap manis)
  • ¼ c. white vinegar
  • ¼ c. chicken stock
  • 2 T. tomato paste
  • 3 t. corn starch
  • ¾ inch fresh ginger (shredded)
  • 1 small onion, diced
  • 1 t. sambal ulek or 1 fresh chili pepper
  • 2 T. Oil

Directions
  1. Clean the pork. Mix all the marinade ingredients and spread over the fillet. Leave for a minimum of 1 hour; it’s best if left overnight in the fridge.
  2. Roast pork in oven at 425 degrees for about 30 minutes, until tender.
  3. Sauce: Soften the diced onion in the oil. Mix remaining ingredients and add to the onions. Slowly boil for 5 minutes until sauce thickens. If needed, sauce can be thinned down with water or pineapple juice.
  4. Serving suggestion: Cut the meat in thin slices and place on a bed of finely shredded cabbage. Pour sauce over meat. Serve with white rice.
