Ingredients
  • 2 x salmon fillet cut across into 1 inch pieces
  • 8-10 spring onion (scallion/green onion) sliced across diagonally into 2 inch pieces
  • 1 tbsp olive oil
  • 2 tbsp sweet chilli sauce
  • 2 x good handful of fresh watercress or baby spinach leaves.

Directions
  1. heat oil in heavy bottomed fry pan or skillet over medium high heat
  2. add onions and cook for 1 minute
  3. add salmon and cook until flesh becomes opaque
  4. add sweet chilli sauce and heat through
  5. stir in watercress or spinach and heat until just starts to wilt.
  6. Serve on top of white rice or noodles
