Chow Chow Relish

- 4 cups chopped cabbage shopping list
- 3 cups chopped cauliflower shopping list
- 2 cups chopped onions shopping list
- 2 cups chopped green tomatoes shopping list
- 2 cups chopped sweet green peppers shopping list
- 1 cup chopped sweet red peppers shopping list
- 3 tablespoons salt shopping list
- 2-1/2 cup pure vinegar shopping list
- 1-1/2 cup sugar shopping list
- 2 teaspoons dry mustard shopping list
- 2 teaspoons celery seed shopping list
- 1 teaspoon turmeric shopping list
- 1 teaspoon mustard seed shopping list
- 1/2 teaspoon ginger shopping list
How to make it
- Combine chopped vegetables then sprinkle with salt and let stand 6 hours in a cool place.
- Drain well.
- Prepare home canning jars and lids according to manufacturer's instructions.
- Combine vinegar, sugar and spices then simmer 10 minutes.
- Add vegetables and simmer 10 minutes longer.
- Bring to boiling then carefully ladle hot relish into hot jars leaving 1/4" head space.
- Adjust caps then process 10 minutes in a boiling water bath canner.
