How to make it

  • Combine chopped vegetables then sprinkle with salt and let stand 6 hours in a cool place.
  • Drain well.
  • Prepare home canning jars and lids according to manufacturer's instructions.
  • Combine vinegar, sugar and spices then simmer 10 minutes.
  • Add vegetables and simmer 10 minutes longer.
  • Bring to boiling then carefully ladle hot relish into hot jars leaving 1/4" head space.
  • Adjust caps then process 10 minutes in a boiling water bath canner.

    I tried this recipe 2 ways, first chopping vegetablea then shredding vegetables. everyone that has tried this recipe loves both but prefers the shredded better. I also left out the red peppers as I don't like them. The chow-chow still turned out excellent. I recommend this recipe to anyone. it is very simple to make, even for someone who has never made relish before. great....great recipe, thank you for sharing it with us
