Chicken Puchero With A Pineapple Twist

- 3 medium size chicken breasts (cut into the desired size you want) shopping list
- 200g tomato sauce shopping list
- tomato paste (optional) shopping list
- 5 cloves of garlic chopped shopping list
- 1 small onion chopped shopping list
- 1 small whole cabbage (cut into halves) remove the hard part in the middle) shopping list
- 4 potatoes (cut into halves) shopping list
- 1 can of pineapple chunks (set aside the syrup) shopping list
- 1 small can of green peas (fresh is good) shopping list
- 2 tbsp cooking oil (any) shopping list
- 2 cups water shopping list
How to make it
- Saute garlic until golden brown (golden brown to add flavor)
- Add the chopped onions and chicken breasts
- Let it simmer for a few seconds then add water
- Boil until chicken is half cooked then add the potatoes and the pineapple syrup
- When the chicken and potatoes are cooked add the tomato sauce and add a little water if necessary. Simmer for a few seconds then add the cabbage, pineapple chunks, peas
- Salt and Pepper to taste
- Serve with rice
- Note: the consistency should be a little thick. If it's too watery, just let it boil (reduction). One purpose of the tomato paste is to thicken
- the sauce.
