Chicken Puchero is a common FilipinoDish. The Mexicans, also have their own version. I added pineapples to give it a little sweet and soury kick. You may also add some green string beans or celery.

Ingredients
  • 3 medium size Chicken breasts (cut into the desired size you want)
  • 200g tomato sauce
  • tomato paste (optional)
  • 5 cloves of garlic chopped
  • 1 small onion chopped
  • 1 small whole cabbage (cut into halves) remove the hard part in the middle)
  • 4 potatoes (cut into halves)
  • 1 can of pineapple chunks (set aside the syrup)
  • 1 small can of green peas (fresh is good)
  • 2 tbsp cooking oil (any)
  • 2 cups water

Directions
  1. Saute garlic until golden brown (golden brown to add flavor)
  2. Add the chopped onions and chicken breasts
  3. Let it simmer for a few seconds then add water
  4. Boil until chicken is half cooked then add the potatoes and the pineapple syrup
  5. When the chicken and potatoes are cooked add the tomato sauce and add a little water if necessary. Simmer for a few seconds then add the cabbage, pineapple chunks, peas
  6. Salt and Pepper to taste
  7. Serve with rice
  8. Note: the consistency should be a little thick. If it's too watery, just let it boil (reduction). One purpose of the tomato paste is to thicken
  9. the sauce.
