Mas Mucho Meatballs Recipe
This is a recipe from the Abs Diet book. I changed the preparation method and the arrangement of the ingredients, but it works and it is tasty.

Ingredients
  • 1 lb. extra-lean ground beef
  • 1/2 C. bread crumbs
  • 2 tsp. Worcestershire sauce
  • 1/2 large onion, diced super fine or grated
  • 1 clove garlic, minced
  • 2 egg whites
  • 1 Tb. ground flax
  • 16 oz. can tomato sauce
  • 1 tsp. dried oragano
  • 1 tsp. dried thyme
  • 1 tsp. dried basil
  • fresh ground black pepper to taste
  • 1/4 C. red wine
  • 5 whole wheat hoagie rolls
  • 1/2 C. reduced-fat mozzarella

Directions
  1. Preheat oven to 400 F.
  2. In a large bowl, combine ground beef, bread crumbs, Worcestershire sauce, ground flax and egg whites.
  3. Mix gently until just combined.
  4. Using a table spoon or a cookie scoop, form mixture into meat balls and place into mini muffin cups coated with cooking spray.
  5. Bake in 400 F oven for 20 minutes.
  6. While meatballs are cooking, heat a medium skillet over medium heat.
  7. Add 1 tsp. olive oil or coat with cooking spray, and add onion to skillet.
  8. Cook until tender and add garlic.
  9. Cook for 1 minute more then add red wine.
  10. Add tomato sauce and seasonings.
  11. Bring to a boil, reduce heat and simmer.
  12. When meatballs are done cooking, add them to the sauce.
  13. Cover and simmer for 20-30 minutes, turning to coat the meatballs on all sides.
  14. Scoop out some of the bread in the rolls to form shallow trenches.
  15. Spoon the meatballs and sauce into each trench (just one side).
  16. Sprinkle the opposite side with shredded mozzarella and place under a broiler for less than a minute to melt cheese (if desired).
