Jazzed Up Split Pea Soup With Cheddar Crisps Recipe
This recipe came from an estate sale. I obtained it when I purchased the family collection from the Hanna Estate in Forney, Texas in 1991.

Ingredients
  • 1 tablespoon butter
  • 2 shallots minced
  • 1 cup cubed cooked ham
  • 1 teaspoon curry powder
  • 14-1/2 ounces heat and-serve split pea soup (not concentrated)
  • 4 slices baguette
  • 1/4 cup shredded sharp cheddar cheese
  • 1/8 teaspoon ground red pepper or paprika

Directions
  1. Heat oven to 400.
  2. Melt butter in a skillet over medium heat then add shallots and cook 5 minutes.
  3. Add ham and curry powder then cook stirring 2 minutes.
  4. Stir in soup then cook until hot and flavors blend about 5 minutes.
  5. Meanwhile place bread slices on a baking sheet.
  6. Mound one quarter of the cheese on each slice then sprinkle with red pepper.
  7. Bake in oven until cheese melts and bread is crisp about 5 minutes.
  8. Pour soup into two bowls then top each with 2 of the cheese crisps.
