Beef Tenderloin Sandwiches with Horseradish Spread

- 2 Tbsp olive oil shopping list
- 1 Tbsp Essence, recipe follows shopping list
- 3/4 Tsp cracked black peppercorns shopping list
- 3/4 Tsp salt shopping list
- 1 (2-pound) beef tenderloin, trimmed of fat-i have also used this on T-Bone steak and Filet with great results shopping list
- 1/2 cup mayonnaise shopping list
- 2 Tbsp perpared horseradish shopping list
- 1 Tsp fresh lemon juice shopping list
- 2 Cups arugula, rinsed and patted dry shopping list
- 2 Tsp extra virgin olive oil shopping list
- 1 Large Loaf of French bread, halved and lightly toasted shopping list
- 1 Large tomato, thinly sliced shopping list
- 1/2 pound parmigiano-Reggiano, shaved with a vegetable peeler shopping list
How to make it
- Preheat the oven to 350 degrees
- In a small bowl, mix together the Olive Oil, Essence, 1/2 tsp of black peppercorns and 1/2 tsp salt, and spread evenly over the beef.
- Heat a large, ovenproof skillet over med-high heat
- Add the beef and sear on all sides
- Transfer to the oven and roast for 25 minutes for med-rare.
- Remove from the oven and let rest for 10 minutes
- Cut the tenderloin into slices.
- In a bowl, combine the mayo, horseradish, lemon juice, remaining 1/4 tsp salt, and 1/4 tsp black pepper, and mix to blend
- Cover and refrigerate until ready to use
- In a medium sized mixing bowl, toss the arugula with olive oil
- Generously spread both sides of the French bread with the horseradish mayo.
- Top one slice with the roast beef, tomato, arugula and cheese.
- Top with remaining slice of bread and press down to close.

- Essence recipe (Emeril's Creole Seasoning)
- 2 Tbsp salt
- 2 Tbsp garlic powder
- 1 Tbsp black pepper
- 1 Tbsp onion powder
- 1 Tbsp cayenne pepper
- 1 Tbsp dried leaf oregano
- 1 Tbsp dried Thyme
- combine all ingredients thoroughly and store in an airtight container
