Ingredients
  • 1 lb Collards (Thinly sliced - no more then 3mm wide)
  • 1 Spanish Onion (Diced)
  • 3 Garlic gloves (Minced)
  • 8 White Potatoes (Peeled and sliced)
  • 3 tbps Olive oil
  • 2 tps Pimento paste

Directions
  1. In a large pot, sauté the onions and garlic with olive oil.
  2. Add potatoes, and then broil until soft for 15-20 minutes.
  3. Puree soup, while also adding pimento paste, until the potatoes smooth and mushy.
  4. Return to a large pot, add collard greens, and then continue cooking until tender (on medium heat for 5 minutes).
  5. Season with salt and pepper
  6. At least that’s how I think my mum makes it :)

This recipe looks yummy, but in my experience collards usually take a LOT longer to cook than 5 minutes. They are sort of the notoriously long-cooking green. Is there a step missing from the directions? Are the collards already cooked in some way when you add them to the soup?


You've brought up a good point Scumptious. I'll have to watch the clock closer the next time I make this one. As for now, I'll change it to medium heat for when the collards are added, and make it better noted that they should be thinly sliced no more then 3mm wide.


Perhaps because they are sliced so thin they take less to cook? Sounds good... now to find out what collards are in Italian. hmmm.....
