I love this dish. The filling is so versatile I use it in chicken fillets and cook it the same way. But it was written for catfish originally and I'm all for making fish palatable for my family. Once you put bacon on it, my hubby will eat it.

If you leave out the bread crumbs or substitute crumbled pork rinds in the filling this would qualify for low carb fare, fancy enough for company. Another tip is lemon infused oil instead of lemon juice, fewer carbs that way.

I sent this recipe to my sister and she made it yesterday. She said it had been a long time since she had made something that was this good! Her only changes were she added some finely chopped shrimp to the stuffing. This rates a 5!!
