A nice hearty lasagna that skips the "boiling the noodles" step. It makes it easier and faster and I can't tell any difference.

Ingredients
  • 2 lbs ground beef
  • 2 (15 1/2 oz) jars pasta sauce
  • 4 slightly beaten eggs
  • 3 c cottage cheese
  • 2/3 c grated Parmesan cheese
  • 2 t Italian seasoning
  • 18 lasagna noodles
  • 3 c shredded Mozzarella cheese
  • 2 c boiling water
  • 1/4 c grated Parmesan cheese

Directions
  1. Brown ground beef; drain
  2. Stir in pasta sauce; let simmer while mixing other ingredients
  3. In a bowl, combine eggs and cottage cheese.
  4. Add 2/3 c grated Parmesan cheese and Italian seasoning.
  5. In a 9x13 pan and an 8" square pan, place 6 cooked noodles (breaking noodles as needed to fit)
  6. Spread 1/3 of the meat sauce on top of the noodles, followed by 1/2 of the cottage cheese mixture.
  7. Top with 1 c Mozzarella cheese
  8. Repeat layer. Top with 6 remaining noodles and meat sauce.
  9. Pour boiling water around edges of pans.
  10. Cover tightly with foil
  11. Bake at 350 deg F for 1 hour
  12. Remove foil
  13. Sprinkle with remaining 1 c of Mozzarella and 1/4 c grated Parmesan cheese.
  14. Bake 3-5 minutes more, uncovered, or until cheese melts.
  15. Let stand 10 minutes before serving.
