I think I got this from a "beef-it's what's for dinner" pamphlet at the state fair one year. I don't remember, but I do know they're awfully tasty. Prep and cook time vary because recipe doesn't include cooking the roast.

Ingredients
  • 1 3/4 to 2 1/2 lbs cooked roast beef
  • 3/4 c. canned black beans, drained
  • 1/2 c Chipotle salsa
  • 8 (8") flour tortillas
  • Optional toppings*

Directions
  1. Transfer liquid from pot roast to medium sauce pan
  2. Cut roast crosswise into 4 pieces; shred with 2 forks
  3. Add beef, beans and salsa to liquid in pan
  4. Heat over med heat until hot, stirring occasionally
  5. Place beef mixtrue in flour tortillas
  6. Add toppings*, as desired
  7. *Toppings: sour cream, shredded cheese, onion, tomatoes, additional salsa
