How to make it

  • Crust:
  • In a food processor combine flour,sugar,salt,and butter to a course meal state.add egg and water until it forms a ball.
  • Roll out and line a torte pan.
  • Filling:
  • Beat 4 egg yolks and 1/2 c. sugar until light; add ricotta through a fine sieve to egg mixture. add lemon zest and juice to eggs.
  • Beat 4 egg whites to stiff peaks and add to egg and ricotta mixture.
  • Pour into tart shell.
  • Place on a baking sheet and bake
  • 35-40 min. at 350degrees.
  • Chill at least 3 hours.
