Ingredients
  • Crust:
  • 11/2 c. flour
  • 1/4 c. sugar
  • 3/4 c. butter
  • 1 large egg
  • 1 Tbs. water
  • Filling:
  • 4 eggs seperated
  • 12 oz. ricotta
  • 1 tsp. potato starch
  • zest from 2 lg.lemons
  • Juice of 3 lemons

Directions
  1. Crust:
  2. In a food processor combine flour,sugar,salt,and butter to a course meal state.add egg and wateruntil it forms a ball.
  3. Roll out and line a torte pan.
  4. Filling:
  5. Beat 4 egg yolks and 1/2 c. sugar until light; add ricotta through a fine sieve to egg mixture. add lemon zest and juice to eggs.
  6. Beat 4 egg whites to stiff peaks and add to egg and ricotta mixture.
  7. Pour into tart shell.
  8. Place on a baking sheet and bake
  9. 35-40 min. at 350degrees.
  10. Chill at least 3 hours.
