Fish Chermoula is a very quick,easy and very tasty dish.

Ingredients
  • For the Chermoula coating you will need:
  • 2 garlic cloves,peeled and finely chopped
  • 1 onion peeled and finely chopped
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground paprika
  • 4 tablespoons FRESH coriander chopped
  • 4 tablespoons FRESH parsley chopped (i use flat leaf)
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon ground turmeric
  • 4 tablespoons olive oil
  • juice of half a lemon
  • salt to season
  • All the above can be adjusted for your own tastes,i usually add more garlic and cayenne.
  • Main Dish:
  • 4 Haddock or Cod fillets
  • 4 tomatoes sliced
  • 1 large green (Bell) Pepper, cut into thin strips

Directions
  1. Pre-heat the oven to 180C/350F/Gas mark 4.
  2. Combine the Chermoula ingredients and season to taste(i use sea salt)
  3. Place the fish on a lightly oiled baking tray and top the fish with a thick coating of the Chermoula mix,leave to marinate for at least 15 minutes.
  4. Bake for 15 minutes until the fish is opaque and begins to flake.
  5. Serve with sliced tomatoes, green pepper and sauteed potato wedges(separate recipe) and salted lemon wedges,if desired.
