Fish With Chermoula

- For the Chermoula coating you will need: shopping list
- 2 garlic cloves,peeled and finely chopped shopping list
- 1 onion peeled and finely chopped shopping list
- 1/2 teaspoon ground cumin shopping list
- 1/4 teaspoon ground paprika shopping list
- 4 tablespoons fresh coriander chopped shopping list
- 4 tablespoons fresh parsley chopped (i use flat leaf) shopping list
- 1/4 teaspoon cayenne pepper shopping list
- 1/2 teaspoon ground turmeric shopping list
- 4 tablespoons olive oil shopping list
- juice of half a lemon shopping list
- salt to season shopping list
- All the above can be adjusted for your own tastes,i usually add more garlic and cayenne. shopping list
- Main Dish: shopping list
- 4 haddock or cod fillets shopping list
- 4 tomatoes sliced shopping list
- 1 large green (Bell) pepper, cut into thin strips shopping list
How to make it
- Pre-heat the oven to 180C/350F/Gas mark 4.
- Combine the Chermoula ingredients and season to taste(i use sea salt)
- Place the fish on a lightly oiled baking tray and top the fish with a thick coating of the Chermoula mix,leave to marinate for at least 15 minutes.
- Bake for 15 minutes until the fish is opaque and begins to flake.
- Serve with sliced tomatoes, green pepper and sauteed potato wedges(separate recipe) and salted lemon wedges,if desired.
