How to make it

  • In a small heavy pot, heat oil. Saute onions and carrots until soft. Add peppers and cook 3 minutes. Add couscous and garlic and stir to coat. Stir frequently until couscous begins to brown, about 7 min.
  • Meanwhile, heat stock until boiling, and add it to the couscous. Turn off heat and cover pot until couscous absorbs all the liquid,. Check after 12 minutes and add a small amount of hot water if couscous needs a few more minutes to cook.
  • Add salt and pepper to taste.
