Toasted Israeli Coucous With Onions Carrots And Peppers Recipe

Ingredients
  • 3/4 cup Israeli coucous
  • 1/2 large onion, chopped fine
  • 1/2 red pepper, chopped fine
  • 1 medium carrot, chopped fine
  • 1 clove garlic, minced
  • 1 tbsp olive oil
  • 1 cup vegetable stock
  • salt/pepper

Directions
  1. In a small heavy pot, heat oil. Saute onions and carrots until soft. Add peppers and cook 3 minutes. Add couscous and garlic and stir to coat. Stir frequently until couscous begins to brown, about 7 min.
  2. Meanwhile, heat stock until boiling, and add it to the couscous. Turn off heat and cover pot until couscous absorbs all the liquid,. Check after 12 minutes and add a small amount of hot water if couscous needs a few more minutes to cook.
  3. Add salt and pepper to taste.
