Roasted Cod With Proscuitto With Cherry Tomatoes And Olives Recipe

Ingredients
  • 12 ounces cherry tomatoes halved
  • 2 ounces pitted black olives
  • 2 tablespoons capers drained and rinsed
  • Grated rind and juice of 1 lemon
  • 2 teaspoons chopped thyme
  • 4 tablespoons extra virgin olive oil
  • 4 cod fillets
  • 4 slices prosciutto
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • Basil leaves to garnish

Directions
  1. Combine tomatoes, olives, capers, lemon rind, thyme and oil in a roasting pan.
  2. Season with salt and pepper.
  3. Fit cod fillets into pan then spoon some of the tomato mixture over fish.
  4. Scatter ham over top and roast in a preheated 425 oven for 15 minutes.
  5. Remove pan from oven.
  6. Drizzle lemon juice over fish then cover with foil and let rest 5 minutes.
  7. Garnish cod with basil leaves and serve.
