How to make it

  • Combine tomatoes, olives, capers, lemon rind, thyme and oil in a roasting pan.
  • Season with salt and pepper.
  • Fit cod fillets into pan then spoon some of the tomato mixture over fish.
  • Scatter ham over top and roast in a preheated 425 oven for 15 minutes.
  • Remove pan from oven.
  • Drizzle lemon juice over fish then cover with foil and let rest 5 minutes.
  • Garnish cod with basil leaves and serve.
