Roasted Cod With Proscuitto With Cherry Tomatoes and Olives

- 12 ounces cherry tomatoes halved shopping list
- 2 ounces pitted black olives shopping list
- 2 tablespoons capers drained and rinsed shopping list
- Grated rind and juice of 1 lemon shopping list
- 2 teaspoons chopped thyme shopping list
- 4 tablespoons extra virgin olive oil shopping list
- 4 cod fillets shopping list
- 4 slices prosciutto shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- basil leaves to garnish shopping list
How to make it
- Combine tomatoes, olives, capers, lemon rind, thyme and oil in a roasting pan.
- Season with salt and pepper.
- Fit cod fillets into pan then spoon some of the tomato mixture over fish.
- Scatter ham over top and roast in a preheated 425 oven for 15 minutes.
- Remove pan from oven.
- Drizzle lemon juice over fish then cover with foil and let rest 5 minutes.
- Garnish cod with basil leaves and serve.
