Beef And Black Bean Burgers With Enchilada Glaze Recipe
This recipe came from an estate sale. I obtained it when I purchased the family collection from the Hachem Estate in Quinlan, Texas in 1982.

Ingredients
  • 1 pound lean ground beef,
  • 1/2 cup prepared bean dip
  • 2 tablespoons ketchup
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • Nonstick cooking spray
  • 10 ounce can enchilada sauce
  • 1/2 cup shredded cheddar cheese

Directions
  1. Mix beef, bean dip, ketchup, salt and pepper in a bowl until well blended.
  2. Form into 4 burgers.
  3. Heat a large heavy skillet over high heat for several minutes.
  4. Spray the burgers and brown on both sides.
  5. Add the enchilada sauce then reduce heat to simmer.
  6. Simmer until sauces reduces to a glaze.
  7. Turning burgers several times to glaze evenly and cook through.
  8. Top with cheese then cover the pan and cook until cheese melts.
