These easy spinach balls are a big hit at parties!

Ingredients
  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed well well to drain all water.
  • 1 small onion
  • 1/3 cup butter or margarine
  • 3 eggs, beaten
  • 1/4 cup freshly grated Parmesan cheese
  • 1/4 tsp thyme
  • 1 tsp crushed garlic
  • 1 cup herbed stuffing
  • 1/4 tsp hot sauce

Directions
  1. Thaw and drain spinach very well, squeezing to remove all water.
  2. In large mixing bowl, combine spinach, onions, butter, eggs, cheese, thyme, garlic, stuffing and hot sauce.
  3. Form into small balls
  4. Place on cookie sheet and bake at 350F for 15-20 minutes.
  5. May be frozen and reheated.

Alterations


I would probably cook the spinach a few minutes so the spinach isn't so dry. But other than that, they are a great appetizer!
