Pickled Red Onions

- Total Time: 5 mins plus few hours refrigeration time shopping list
- 2 medium red onions, halved lengthwise, root end removed, and thinly sliced (about 5 cups) shopping list
- 1/2 cup freshly squeezed lime juice shopping list
- 1 cup freshly squeezed orange juice shopping list
- 1 teaspoon granulated sugar shopping list
- 1 tablespoon kosher salt shopping list
- 1 jalapeño pepper, halved lengthwise and very thinly sliced shopping list
How to make it
- Bring a small pot of water to a boil over high heat.
- Add the onions and blanch them for about 15 seconds. Drain well in a colander.
- Combine the lime and orange juices, sugar, and salt in a medium mixing bowl, and stir to combine.
- Add the blanched red onion slices and the jalapeño,
- stir to combine.
- Allow pickled onion to sit, refrigerated, for a few hours before serving.
