How to make it

  • Bring a small pot of water to a boil over high heat.
  • Add the onions and blanch them for about 15 seconds. Drain well in a colander.
  • Combine the lime and orange juices, sugar, and salt in a medium mixing bowl, and stir to combine.
  • Add the blanched red onion slices and the jalapeño,
  • stir to combine.
  • Allow pickled onion to sit, refrigerated, for a few hours before serving.
