Ingredients
  • Total Time: 5 mins plus few hours refrigeration time
  • 2 medium red onions, halved lengthwise, root end removed, and thinly sliced (about 5 cups)
  • 1/2 cup freshly squeezed lime juice
  • 1 cup freshly squeezed orange juice
  • 1 teaspoon granulated sugar
  • 1 tablespoon kosher salt
  • 1 jalapeño pepper, halved lengthwise and very thinly sliced

Directions
  1. Bring a small pot of water to a boil over high heat.
  2. Add the onions and blanch them for about 15 seconds. Drain well in a colander.
  3. Combine the lime and orange juices, sugar, and salt in a medium mixing bowl, and stir to combine.
  4. Add the blanched red onion slices and the jalapeño,
  5. stir to combine.
  6. Allow pickled onion to sit, refrigerated, for a few hours before serving.
