Ingredients
  • 1 kilo of ripe tomatoes ( 4 – 5 depending on size)
  • 6 eggs
  • Salt – Pepper
  • Olive oil
  • Additional optional ingredients: feta cheese, hot chilly pepper.

Directions
  1. Peel tomatoes and finely cut with knife. I prefer to use a non-stick frying pan so as to use less oil but if you have no problem with calories do it the classic way.
  2. Heat oil and add tomatoes, salt and pepper and stir until all juices are evaporated and have a dense sauce.
  3. Beat the eggs and add to mixture, stir well until eggs are done.
