Bean Sprout Sausage Omelet Recipe
This recipe came from an estate sale. I obtained it when I purchased the family collection from the Kincade Estate in Lewisville, Texas in 1990.

Ingredients
  • 4 sausage links
  • 4 large eggs slightly beaten
  • 2 tablespoons milk
  • 1/4 teaspoon celery salt
  • 1/8 teaspoon freshly ground pepper
  • 2 tablespoons butter
  • 1/4 shredded cheddar cheese
  • 1/4 cup fresh bean sprouts
  • Fresh dill weed

Directions
  1. Cook sausage links over medium heat until done turning occasionally.
  2. Cut into 1/2" pieces and set aside.
  3. Combine eggs, milk, celery salt and pepper in a small bowl.
  4. Beat with whisk until well mixed but not frothy.
  5. Heat 1 tablespoon butter in omelet pan over medium high heat.
  6. Pour in half egg mixture.
  7. Cook gently lifting edges with a spatula so uncooked mixture flows underneath.
  8. When eggs are set sprinkle half the omelet with half each of cheese, sausage and sprouts.
  9. Fold omelet and turn onto serving plate.
  10. Repeat with remaining ingredients.
  11. Garnish with dill weed.
