How to make it

  • Cut celery heart, beets and apple into cubes.
  • Wash greens and drain well then tear into bite size pieces.
  • Combine all ingredients in a salad bowl.
  • A few minutes before serving pour vinaigrette over salad and toss.
  • To make vinaigrette combine olive oil, lemon juice and mustard in a jar with a lid.
  • Crush or chop garlic finely then add garlic and herbs to oil mixture and shake well.
  • Season with salt and pepper and shake again.
