Ingredients
  • 1 (1 3/4-lb) head cauliflower, cut into 3/4-inch-wide florets
  • 1 1/4 lb Yukon Gold potatoes, peeled and cut into 1/2-inch cubes
  • 5 tablespoons vegetable oil
  • 1/2 teaspoon cumin seeds
  • 3/4 teaspoon salt
  • 1 medium onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 2 teaspoons minced fresh jalapeño, including seeds
  • 2 teaspoons minced peeled fresh ginger
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon cayenne
  • 1/2 cup water
  • Accompaniment: lemon wedges

Directions
  1. Put oven rack in upper third of oven and place a shallow baking pan on rack. Preheat oven to 475°F.
  2. Toss cauliflower and potatoes together in a bowl with 3 tablespoons oil, cumin seeds, and ¼ teaspoon salt. Spread in hot baking pan and roast, stirring occasionally, until cauliflower is tender and browned in spots and potatoes are just tender, about 20 minutes.
  3. While vegetables are roasting, cook onion, garlic, jalapeño, and ginger in remaining 2 tablespoons oil in a 12-inch heavy skillet over moderate heat, stirring frequently, until very soft and beginning to turn golden, 8 to 10 minutes. Add ground cumin, coriander, turmeric, cayenne, and remaining ½ teaspoon salt and cook, stirring constantly, 2 minutes. Stir in water, scraping up any brown bits from bottom of skillet, then stir in roasted vegetables. Cook, covered, stirring occasionally, 5 minutes.

This looks delicious even when eaten alone! I have tried another cauliflower recipe that just requires cauliflower, anchovies and parsley and I liked it a lot. I may try yours one day when I can gather all the ingredients. :)


I ate it again last night as a main course. It was delicious! Warm and filling and not too heavy.

but what is poured on top in the pic?...
i assume it's some sort of yoghurt something....?


I'm not sure, but I think some sort of yogurt blend sounds like a good guess. I got the recipe (and the photo) from Smitten Kitchen's awesome website. We could ask her I suppose. When I make it, I just eat it the way the recipe states. I should try it with yogurt too!


I love Indian veggie dishes and this one caught my eye early on. It was recently on my to-make list but I didn't have time so it's still on my list. I know it will be delicious, just by looking at the ingredients. I am thinking the white stuff might be raita. It would make sense, as the dish has heat and raita is great for cooling it down.
I also used this recipe in my Indian-Style Buffet Dinner as a side dish. I think it was a perfect addition as it's something similar to what I see on the Indian buffet that I love to visit on Sunday afternoons. YUMMMMM


This is fabulous. I couldn't resist so made it this afternoon and the tastes went WAY ABOVE my expectations. Yummy. A permanent in my files for sure.

Yum yum! Having been a member for about 5 seconds, this caught my eye immediately. Can't wait to try.


Looks great! Since I can't eat potatoes (nightshades), I'll substitue sweet potatoes, and I'll also have to omit the jalapeno & cayenne (same reason - sorry) I'll let you know how it turned out.
