Chicken Atop Rice Recipe


CHICKEN ATOP RICE Recipe
A easy one pot dish. All you need is a salad and some bread. This is one of our favorites to have.

Ingredients
  • 1 ¼ cup rice uncooked (long grain regular)
  • 2 tablespoons chopped onion (optional)
  • ½ teaspoon salt
  • 1 stick celery, chopped (optional)
  • 2 cups water
  • 1 (10 ounce) can cream of chicken soup
  • 2 ½ or 3 pounds of chicken breast or pork chops
  • 2 tablespoons butter, melted
  • ½ teaspoon salt
  • ½ teaspoon paprika (optional)

Directions
  1. Heat oven to 375 degrees. In a 9x13 inch baking pan combine first seven ingredients, mix well. Arrange meat on rice mixture skin side up. Drizzle with the butter. Sprinkle with salt and paprika. Bake uncovered for 1 hour.
  2. For pork chops brown chops arrange on rice mixture and omit butter.
  3. Makes 5 to 6 servings.
