Pineapple Blueberry Buckle

- 1 small can crushed pineapple shopping list
- 1 ¼ C flour shopping list
- ½ C sugar shopping list
- ¼ C shortening shopping list
- ½ C milk shopping list
- 1 ½ t powder shopping list
- 1 t grated lemon peel shopping list
- ½ t vanilla shopping list
- ¼ t salt shopping list
- 1 egg shopping list
- 1 C blueberries shopping list
- Crumb Topping shopping list
- ¼ margerine, softened shopping list
- ½ C sugar shopping list
- 1/3 flour shopping list
- ½ t cinnamon shopping list
- Cut margerine into ingredients with pastry blender until fine crumbs shopping list
- pineapple Sauce shopping list
- 2 T packed brown sugar shopping list
- 1 t cornstarch shopping list
- Reserved pineapple syrup shopping list
- ¼ t lemon juice shopping list
- Mix brown sugar and cornsarch in 1qt saucepan. Add enough water to syrup to make ¾ C shopping list
- Stir into brown sugar mixture shopping list
- Cook over medium heat stirring constantl until bubbly. Cook 1 minute shopping list
- Stir in lemon juice shopping list
- Serve warm over cake shopping list
How to make it
- Heat oven to 350
- Drain pineapple, reserve juice
- Mix flour, sugar, shortening, milk, powder, lemon peel, vanilla, salt and egg in large bowl.
- Fold in blueberries and pineapple
- Spread in ungreased square pan, 8x8x2
- Prepare Crumb Topping and sprinkle evenly on top
- Bake about 45 – 50 minutes or until toothpick inserted in center comes out clean
- Serve warm with Pineapple Sauce
