Eggplant Parmesan

- eggplant sliced thin shopping list
- Italian style bread crumbs shopping list
- Freshly grated parmesan or romano cheese shopping list
- Fresh or Shredded Mozzarella shopping list
- eggs shopping list
- salt shopping list
- pepper shopping list
- olive oil or butter for frying shopping list
- marinara sauce (I prefer mine homemade being the Italian girl that I am) shopping list
How to make it
- Eggplant Cutlets:
- Place cheese in breading dish
- Add salt and pepper to bread crumbs and put in separate breading dish
- Lightly whisk eggs and place in bowl
- Rince chicken under water
- Place in the cheese
- Dip in the egg
- Then place in the breadcrumbs
- Once all are breaded cook in frying pan with either olive oil or butter about 5 min on each side until eggplant is soft
- Once they are done place on a dish with a paper towel to let some of the olive oil or butter to absorb on to
- Place eggplant in baking tray, and spoon place the basil on top of eggplant and then place the mozzarella on top of each slice. If you decide to make a lot it is a good idea to layer it kind of like an eggplant lasagne.
- Cook in oven at 350 until all the flavors mesh and the cheese is nice and melted. Garnish with basil and enjoy
