Classic eggplant parmesan recipe

Ingredients
  • Eggplant sliced thin
  • Italian style bread crumbs
  • Freshly grated parmesan or romano cheese
  • Fresh or Shredded Mozzarella
  • Eggs
  • Salt
  • Pepper
  • Olive oil or butter for frying
  • Marinara Sauce (I prefer mine homemade being the Italian girl that I am)

Directions
  1. Eggplant Cutlets:
  2. Place cheese in breading dish
  3. Add salt and pepper to bread crumbs and put in separate breading dish
  4. Lightly whisk eggs and place in bowl
  5. Rince chicken under water
  6. Place in the cheese
  7. Dip in the egg
  8. Then place in the breadcrumbs
  9. Once all are breaded cook in frying pan with either olive oil or butter about 5 min on each side until eggplant is soft
  10. Once they are done place on a dish with a paper towel to let some of the olive oil or butter to absorb on to
  11. Place eggplant in baking tray, and spoon place the basil on top of eggplant and then place the mozzarella on top of each slice. If you decide to make a lot it is a good idea to layer it kind of like an eggplant lasagne.
  12. Cook in oven at 350 until all the flavors mesh and the cheese is nice and melted. Garnish with basil and enjoy
