How to make it

  • Preheat oven to 375 degrees Fahrenheit.
  • Place Mahi-Mahi fillets in a glass baking dish. Pour Dale's Seasoning over Mahi-Mahi fillets and place in refrigerator for 10 minutes.
  • Rinse and dry scallion and tomato. Slice Scallion into thin slices. Chop tomato and mince garlic.
  • Remove Mahi-Mahi fillets from the fridge and top with Scallion, Tomato and Garlic.
  • Place in preheated oven and bake for 20-25 minutes.
  • Fillets are done when the meat easily pulls away with a fork.
  • Remove from baking dish, transfer to serving plate and serve immediately.
  • Squeeze fresh lemon juice over each fillet, if desired.

    I cooked this and it was great! I didn't have "Dale's Seasoning" so I just seasoned it myself, and everything else went really well. AWESOME recipe!

    Dale's Seasoning is a liquid marinade, similar to soy sauce in flavor. I'm pretty certain most major grocery stores carry it and it's usually located with marinades and sauces. Dale's website is at http://www.dalesseasoning.com.
