Guaitiao Rad Na Wide Noodles In A Creamy Sauce Recipe
Yet another fantastic recipe from my friend Loretta's collection. I only wish you could all attend one of her dinner parties. This month's theme is Greek so I'll be posting some of those as well. Enjoy

Ingredients
  • 1 cup of pork loin thinly sliced and cut into bite size pieces
  • 1 cup of sen yai soaked until soft in warm water
  • 1-1/2 cups broccoli
  • 1/4 cup kaffir lime leaves shredded
  • 1/4 cup basil shredded
  • 1/4 cup mushrooms
  • 1 cup water
  • 3 tablespoons fish sauce
  • 2 tablespoons dark sweet soy sauce
  • 2 tablespoons Maggi seasoning
  • 2 tablespoons sugar
  • 2 tablespoons arrowroot powder mixed in a little water
  • 1 tablespoon garlic thinly sliced
  • 1 teaspoon freshly milled black pepper

Directions
  1. Combine Maggi sauce, fish sauce and soy sauce then add pepper.
  2. Marinade meat for 1 hour before draining reserving marinade.
  3. Cut 3/4 cup broccoli then peel and slice stems then chop leaves.
  4. Shred basil and lime leaves.
  5. In large wok over medium heat sauté garlic in oil then stir fry the noodles until they turn brown.
  6. Remove and turn heat to high and briefly stir fry the pork to seal it.
  7. In a large saucepan heat water then stir in and boil briefly the marinade and arrowroot.
  8. Add meat and other ingredients except noodles and stir occasionally for 10 minutes.
  9. Add noodles and continue to cook for 4 minutes to complete the dish.
  10. Serve in individual bowls.
