This is a favorite of mine, and is easy to alter for different flavors. Typically I use cooked bacon, but any cooked brakfast meat will work. I don't measure, so mentioned measurements are approximate!

Careful with the cheese on this. I like a lot of cheese, but found that too much makes it more liquidy in the middle. Also, I've been known to add a bit more meat, particularly bacon. Just like Emeril Lagasse, it's a prk fat thing for me . . . . .
