My sister gave me this recipe years ago. It is without a doubt the best zucchini bread I have ever tasted.
It makes 2 loaves and it freezes well.
Tastes even better the second day but the first loaf never lasts that long. Enjoy!

I'm adding this to my zucchini roster! I use whole wheat flour and add some to the raw shredded zuchinni before mixing it all together, so that the zuchinni will stay distributed all throught the bread and not sink to the bottom. You may never had this problem.
