Antipasto Salad Recipe
This is an incredible recipe. I got this from my catering friend Jimmy who often serves these at his catering events.

Ingredients
  • 8 ounce package sliced salami cut into bite size pieces
  • 2 medium tomatoes cut into bite size pieces
  • 1 small zucchini sliced
  • 1 small yellow summer squash sliced
  • 1 cup cauliflower flowerets
  • 1 cup broccoli flowerets
  • 1 small cucumber sliced
  • 2 stalks celery sliced
  • 1 cup bottled Italian salad dressing
  • 1 medium green sweet pepper cut into bite size pieces
  • 1 medium carrot sliced
  • 1/2 small red onion sliced and separated into rings
  • 1/2 cup pitted ripe olives or pimiento stuffed green olives
  • 1/2 cup pepperoncini salad peppers

Directions
  1. In a very large bowl combine all of the ingredients tossing to coat mixture with dressing.
  2. Cover and chill in refrigerator for at least 4 hours or up to 24 hours tossing occasionally.
