This is another way to stuff your chicken...like thigh !!! This is also can be made with duck...Best serv with rice and a side of hot chilli sauce...

Ingredients
  • 2 bag of baby spinach washed cut leaves into half
  • 2-1/4 cups grated mozzarela cheese
  • 1/4 cup chopped fresh basil
  • 2 grove of garlic crushed
  • 1/4 tsp. salt
  • 1/8 tsp. black pepper
  • 8 chicken thigh skinless (2 lb.)
  • 8 large tooth pic

Directions
  1. PREHEAT oven to 350°F. Combine mozzarela cheese, spinach, basil and garlic, mix well.
  2. PLACE chicken thigh on cutting board cut the upper thigh side way and removed bone,( don't cut it all the way though) leave the bone on the bottom half for handle ( removed all meat on the buttom half) Place chicken, top-sides down, spread evenly with stuffing mixture , tightly roll up chicken, close it with a tooth pic.Place down, in 13x9-inch baking dish. Drizzle evenly with salt and pepper.
  3. BAKE 40 min. until chicken is cook and tender. Removed tooth pic and arrange it nicely cut onto your serving plate. ENJOY

I made this last night, with the recommended side of rice (brown of course) it was delicious...the hubby was a big fan too!
